I work for a construction company. We are general contractors and use a fair number of subcontractors. Is there a way to track their contract amount in EZJOB so that change orders can be added and payments can be deducted. I always worry that I am going to overpay or underpay these guys. Currently I use Quickbooks and I have to pull their original contract and run a vendor report to make sure they are paid correctly.

The subcontract management in EZJOB is what you need. Each subcontract has it's own record, including dated change orders (with lots of description) and all invoices charged to that subcontract. Retainage payable is tracked by invoice, so you always know not only how much retainage is currently being withheld, but also what invoices it was withheld from. When you are recording an AP invoice to a subcontract, the subcontract summary information is displayed so you know Original Contract Amt, Revised Contract Amt, Amount Applied to Contract and Amount Retained. This one feature can pay for itself quickly.
